Chris Finnegan was a great amateur fighter winning a gold medal at the Olympics. I think he fought against Bob Foster for the world light heavyweight title as some point as well. Other than that i cant think of too many, potentially there are some fighters than could of been an amateur champion, but many move up to the pro ranks as soon as possible. Joe Calzaghe was also a good amateur fighter winning three british titles at different weights.
